I am very fortunate to have a family made up for a whole bunch of different ethnicity's because that means all sorts of good foods. Irish Soda Bread

4 to 4 1/2 Cups Flour
2 Tbsp. Sugar
1 tsp. Salt
1 tsp. Baking Soda
4 Tbsp. Butter
1 Cup Raisins
1 Egg, lightly beaten
1 3/4 Cups Buttermilk
Steps:
1) Preheat over to 425 degrees.
2) In a large mixing bowl, whisk together 4 Cups Flour, the Sugar, Salt, and Baking Soda.
3) Work Butter into flour mixture until it resembles coarse meal.
4) Stir in raisins.
5) Make a well in the center of the flour mixture.
6) Add beaten Egg and Buttermilk to well.
7) Mix with wooden spoon until dough is too stuff to stir.
8) Dust hands with flour, then gently knead dough in bowl just enough to form a rough ball.
9) Transfer dough to lightly floured surface and shape into a round loaf.
10) Important: the dough will be a little sticky and pretty shaggy. You want to work it enough so that it comes together. Do not over-knead.
11) Transfer dough to a lightly greased cast-iron skillet or baking sheet.
12) Score top of dough about 1 1/2" deep in an "X" shape.
13) Bake until bread is golden and bottom sounds hollow when tapped (approx. 35-45 min.)
14) Remove pan from oven and let sit for 5-10 minutes.
15) Remove to a rack to cool briefly.
16) Best when eaten warm and just baked.

Mmmmm how I love Irish soda bread! I have a recipe in my family that's been passed down (it looks very similar to this actually!) and it is just scrumptious. It's so yummy in fact, that I couldn't possibly only make it for St. Patrick's Day! ;)
