Each year, our community hosts Latin-American Festival, a great chance to people to get out and celebrate everything that makes Latin-American cuture spectacular. Included, of course, are excellent music and, my favorite, food. I never make it out of the festival without picking up some enchiladas. But, what to do the rest of the year? My family and I have only made this recipe a few times but, boy, is it ever good. Enchiladas are made by taking a tortilla, wrapping it around a yummy filling, covering it with cheese, and baking it. Typically, enchiladas are made with corn tortillas. This recipes calls for flour tortillas instead. Either way, enjoy!
1 lb. Ground Beef
1 Small Onion, chopped
1 (1.5 oz.) pkg. Dry Enchilada Sauce Mix
10 (10 inch) Flour Tortillas
2 cups Cheddar Cheese, shredded
1 (2.25 oz.) can Sliced Black Olives, drained
Steps:
1) Preheat over to 350 degrees.
2) Cook ground beef and onion over medium high heat until beef is evenly browned and onion is tender.
3) Prepare the enchilada sauce according to package directions.
4) Pour 1/4 cup of the sauce into the bottom of a 9x13 inch baking dish.
5) On each tortilla, place an equal portion of the ground beef mixture.
6) To each tortilla, add 1 oz. cheddar cheese, reserving at least 1/2 cup of cheese.
7) Tightly roll tortillas and place, seam side down, in the baking dish.
8) Pour remaining sauce over the top of the enchiladas and sprinkle with the remaining cheese and olives.
9) Bake for 20 minutes or until sauce is bubbly and cheese is thoroughly melted.
